Delicious Egg Free Banoffee Pancakes

Egg free pancakes are great if you’ve got someone in the family with allergies. My son is allergic to eggs and it brings him out in red spots and swelling over his face!!!

So we keep eggs well out of his way!

Now I’ve tried to make pancakes for years without eggs.  Substituting with a range of different ingredients, but when it comes down to it they aren’t very good.

So, the only alternative that works well is an egg replacement powder. I can’t believe it took me so long to perfect this, but I have. These pancakes taste the same as egg pancakes and my son can now have them. Breakfast, lunch, dinner whenever he wants….

All you need is:

Egg replacement powder

Flour (I use self raising)

Milk

So simple! Put a cup of flour in a food processor, I use a nutribullet as it’s so easy to whizz together. Add a cup of milk and 3 tablespoons of the egg powder.

Mix it all together and add more or less milk or flour depending on what consistency you like.

On a hob heat a pan with sunflower oil in it until very hot. Use a ladle to drop some of the mixture into the pan, swirling it around the pan to coat the whole surface. Allow it to work it’s magic until the edges of the pancake start bubbling, then gradually ease the edges up so the pancake is moving freely on the pan.

Now…. if you’re feeling brave flip that beauty and get the other side cooking.  There you have it, a delicious pancake.

You can keep it simple and add sugar and lemon juice. But if you want to get a real hit, then make a banoffee pancake like my picture.

Heat 50g butter and 50g dark brown soft sugar until the sugar has dissolved. Then add 100g condensed milk into the pan and keep stirring to get a great caramel sauce. Finely slice some banana and add to the sauce.

Pour this over your pancake and keep some for later if you’ve got too much.

Ingredients
  • 1 cup self raising flour
  • 1 cup milk
  • 3 tbsp egg replacement powder
  • Banana
  • 50g soft brown sugar
  • 50g butter
  • 100g condensed milk
Instructions
  1. Add the flour, milk and egg powder in a food processor and mix well. Add more milk if it isn't funny enough.
  2. Heat a pan with some sunflower oil and add some of the mixture when it is hot.
  3. When it starts to bubble at the sides flip it over and cook the other side.
  4. In a separate pan heat together the sugar and butter until mixed thoroughly.
  5. Add the condensed milk until you have a thick caramel sauce then add sliced banana.
  6. Pour the sauce over your cooked pancake and roll it up and eat!

Eat it quickly while warm and before anyone else tucks in….
