Amazing Millionaires Shortbread

This Millionaires Shortbread is so  easy to make, and a great one for the kids to join in with….

This will make loads so you may have to take it to work and spread the love!

Preparation Time:  20 minutes

Cooking time:  45 Minutes

Makes approximately 20 squares

Ingredients:

For the shortbread

225g/8oz plain flour
175g/6oz unsalted butter
75g/2¾oz caster sugar

For the topping

150g/5oz butter
1 x 379g can condensed milk
100g/3½oz golden syrup
350g/12oz dark chocolate

Method:

  • Preheat the oven to 150C/300F and put some tinfoil or baking parchment in a 9in square tin.
  • Place the flour and butter in a large bowl and use your fingers to make breadcrumbs. The kids love this bit!
  • Add in the caster sugar and mix again with your fingers.
  • Put the mixture into the cake tin and spread it out evenly with the back of a spoon. Then press it down with your fingers so it is firm.
  • Bake this in the oven for 30 minutes until the shortbread is light brown.
    While this is baking, melt the butter, condensed milk and golden syrup in a saucepan. Stir this occasionally until the mixture is smooth.
  • Increase the heat and bring to the boil, stirring frequently. Wait until the caramel is thick and golden brown, then let it cool down. Pour this over the shortbread and allow it all to cool down.
  • Break the chocolate into pieces and melt in a bowl over simmering water. Stir it occasionally. Then pour this over the shortbread and caramel mixture and let it cool down further. Put it in the fridge to do this quicker.
  • When the Millionaires shortbread has totally cooled down dust with some icing sugar, and hey presto!! Cut into small squares and enjoy.
    The kids love this and it’ll keep for some time!
