Stir Fried Salmon with Leeks
Salmon is one of those dishes that you can’t go wrong with and everyone seems to enjoy. Picture yourself in Canada somewhere pulling one of these bad boys out of a bears mouth over a stream…. Or just go and buy it from the supermarket I guess.
Anyhow you’ve got to try this one as it is mega easy and tastes divine. The salmon falls apart easily as you push through it with a fork, with the chilli giving you that extra kick you were after, I tend to add chilli to a lot of my dinners, because I like the heat!!!
Gently sautéed leeks with a knob of butter underneath it all works so well. NOt adding too many calories if you’re after a low carb meal. I’ll go back to this dish again and again if I’m after losing a few pounds and want a nice healthy meal.
Here’s what you’re gonna have to buy:
Ingredients
450g salmon fillet/skinned
2 tbsp sweet soy sauce
2 tbsp tomato ketchup
1 tsp rice wine vinegar
1 tbsp demerara sugar
1 clove garlic
4 tbsp corn oil
450g leeks shredded
finely chopped red chillies
Method
1. Cut the salmon into slices and place in a shallow non-metallic bowl
2. Mix together the soy sauce, tomato ketchup, rice wine vinegar, sugar and garlic
3. Pour the mixture over the salmon, toss and leave to marinate for 30 minutes
4. Heat 3 tbsp of corn oil in a saucepan and stir-fry the leeks for 10 minutes until crispy and tender
5. Remove the leeks and add the remaining oil. Add the salmon and fry for 2 minutes
6. Remove the salmon and spoon it onto the leeks. Garnish with the red chillies
