This recipe is for Egg Free Cupcakes, now this won’t be for everyone, but in a world where there seems to be an ever-increasing number of allergies, some of you will find this useful. My kids have even done a video for you So you can see them making the surprise cup cakes.

Now why is this important to me?? Well my son is allergic to Eggs, so we have all had to adjust our lifestyle to suit. No more boiled eggs with soldiers! Or scrambled egg on toast…
When he was one-year old we decided to make him some scrambled egg, to start introducing him to different food types. He ate a mouthful that was presented to him on a baby spoon and seemed quite happy. After doing this a few times, my wife suddenly noticed some red marks appearing on his face, this gradually spread to hive like red marks all over his body. We immediately called the doctor who gave him some steroid medication and eventually it all calmed down.
Since that point we’ve been in and out of hospital for allergy testing, skin prick testing and food challenges. He’s now 12 years old and is still allergic to eggs and peanuts, so has to carry medication around with him.
Its normal for us now, and for him, but we just need to be careful, especially if we’re going abroad. We make all manner of egg free delights, including pancakes and Yorkshire puddings!! (which I’ve got down to a tee now!!)
Anyway, enjoy making them, here’s the recipe.

- 1 cup of milk
- 1 tsp lemon juice
- ½ cup sugar
- ⅓ cup melted margarine
- 1 tsp vanilla extract
- 1 cup plain flour
- ½ cup cocoa powder
- ¾ tsp bicarbonate of soda
- ½ tsp baking powder
- ¼ tsp salt
- Preheat the oven to 190 degrees Centigrade
- Fill a cupcake tray with cupcake cases
- Mix together the milk, lemon, margarine and vanilla
- Stir in the sugar
- Sift in the flour, drinking chocolate, bicarbonate, baking powder and salt
- Gently mix and fill the cupcake cases ⅔rds up
- Bake for 18-20 minutes until a knife comes out clean
- Cool on a wire rack
- Decorate and enjoy eating!
