Stir Fried Salmon with Leeks

- 450g salmon fillet
- 2 tbsp sweet soy sauce
- 2 tbsp tomato ketchup
- 1 tsp rice rice wine vinegar
- 1 tbsp demerara sugar
- 1 clove garlic
- 4 tbsp corn oil
- 450g leeks shredded
- finely chopped red chillis
- Cut the salmon into slices and place in a shallow non-metallic bowl
- Mix together the soy sauce, tomato ketchup, rice wine vinegar, sugar and garlic
- Pour the mixture over the salmon, toss and leave to marinate for 30 minutes
- Heat 3 tbsp of corn oil in a saucepan and stir-fry the leeks for 10 minutes until crispy and tender
- Remove the leeks and add the remaining oil. Add the salmon and fry for 2 minutes
- Remove the salmon and spoon it onto the leeks. Garnish with the red chillies
