Good old Fish Pie!!

Try this good old fish pie to fill you up for dinner tonight!

Ingredients
  • 1 kg potatoes
  • 150 g Cheddar cheese
  • 1 lemon
  • 4 sprigs of fresh flat-leaf parsley
  • 300 g salmon fillets
  • 300 g smoked haddock fillets
  • 50g of butter
  • 50g flour
  • 500ml milk
  • 125 g raw peeled prawns
  • olive oil
  • cup of baby spinach , optional
Instructions
  1. Preheat the oven to 200°C and peel the potatoes and cut into 1 inch blocks.
  2. Boil the potatoes for approximately 15 minutes in salted water.
  3. Meanwhile grate the lemon and cheddar, and add to chopped parsley.
  4. Chop the salmon and haddock into bite size pieces and add to a tray dish with the prawns, cheddar, parsley and lemon gratings.
  5. Set this to the side and begin making a white sauce. Heat a medium pan on the hob and gently melt the butter. Then add the flour and mix well.
  6. Slowly add the milk to this ensuring you dont get any lumps. I use a whisk to help with this. Do this slowly or you'll mess it up!
  7. When you have a nice consistency add the white sauce to the tray dish and mix well. If you want to add spinach then add it to a pan until wilted and mix this into the tray as well.  Make sure you season the tray ingredients well with salt and pepper.
  8. Drain the potatoes, add a little olive oil and mash with some reserved chopped parsley, butter, milk and seasoning. Layer this over the tray.
  9. Bake in the oven for 40 minutes, or until cooked through. Serve this with fresh steamed vegetables or a salad.
