Chilli beef noodles

I’m not sure there is anything much better than a spicy noodle dish. Especially when its made up of left over beef from your sunday roast.

This will impress your friends and is pretty low cost too!

I’ve always been a fan of Asian food, and although I’ve had my fair share of takeaways, making your own has got be better. Hasn’t it!!

Anyhow here’s what you’ll need!!

Ingredients

  • 1.5 litres beef stock
  • 1 tsp Chinese five spice powder
  • 200g rice or egg noodles
  • 1/2 x 600g pack of stir fry vegetables
  • 1 tbsp soy sauce
  • 1 tbsp sweet chilli sauce
  • 1 tbsp rice wine vinegar
  • juice 1 lime
  • 1 red chilli chopped

Method

  • Depending on whether you’ve got left over beef or fresh beef to fry, your method will be slightly different. Fresh beef will have to be fried after being cut into strips for 2-3 mins until seared all over. Left over beef can simply be cut up and added as below.
  • Put all the ingredients, apart from the lime juice, in a large pan and bring to the boil.
  • Lower the heat on the pan to a simmer for about 5 minutes, or until the noodles are tender and the beef is thoroughly heated through.
  • Then all you’ve got to do is pour into a bowl and consume!!
